Eggmen
Ingredients:
- 1 pack of ramen noodles
- 2 cups chicken or vegetable broth
- 1 tablespoon soy sauce
- 1 tablespoon miso paste
- 1 clove garlic, minced
- 1-inch piece of ginger, grated
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1 cup sliced mushrooms
- 1 cup spinach or bok choy
- 2 green onions, sliced
- 2 eggs
- Optional toppings: sliced chili, sesame seeds, nori (seaweed), bamboo shoots, corn
Instructions:
- Prepare Soft-Boiled Eggs:
- Bring a pot of water to a boil.
- Gently lower the eggs into the boiling water and cook for 6 minutes.
- Transfer the eggs to an ice bath to cool. Once cooled, peel and set aside.
- Cook Noodles:
- Cook ramen noodles according to package instructions. Drain and set aside.
- Make Broth:
- In a pot, heat vegetable oil over medium heat.
- Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
- Add sliced mushrooms and cook until softened.
- Pour in chicken or vegetable broth, soy sauce, and miso paste. Stir to combine.
- Bring to a simmer and cook for 5-7 minutes.
- Assemble Ramen:
- Add cooked noodles to the broth and simmer for 1-2 minutes.
- Stir in spinach or bok choy until wilted.
- Remove from heat and drizzle with sesame oil.
- Serve:
- Divide the ramen and broth into bowls.
- Top each bowl with a soft-boiled egg, sliced in half.
- Garnish with green onions and optional toppings like sliced chili, sesame seeds, nori, bamboo shoots, or corn.
