Eggmen

Ingredients:
  • 1 pack of ramen noodles
  • 2 cups chicken or vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon miso paste
  • 1 clove garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 cup sliced mushrooms
  • 1 cup spinach or bok choy
  • 2 green onions, sliced
  • 2 eggs
  • Optional toppings: sliced chili, sesame seeds, nori (seaweed), bamboo shoots, corn
Instructions:
  1. Prepare Soft-Boiled Eggs:
    • Bring a pot of water to a boil.
    • Gently lower the eggs into the boiling water and cook for 6 minutes.
    • Transfer the eggs to an ice bath to cool. Once cooled, peel and set aside.
  2. Cook Noodles:
    • Cook ramen noodles according to package instructions. Drain and set aside.
  3. Make Broth:
    • In a pot, heat vegetable oil over medium heat.
    • Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
    • Add sliced mushrooms and cook until softened.
    • Pour in chicken or vegetable broth, soy sauce, and miso paste. Stir to combine.
    • Bring to a simmer and cook for 5-7 minutes.
  4. Assemble Ramen:
    • Add cooked noodles to the broth and simmer for 1-2 minutes.
    • Stir in spinach or bok choy until wilted.
    • Remove from heat and drizzle with sesame oil.
  5. Serve:
    • Divide the ramen and broth into bowls.
    • Top each bowl with a soft-boiled egg, sliced in half.
    • Garnish with green onions and optional toppings like sliced chili, sesame seeds, nori, bamboo shoots, or corn.
